This month’s theme is India & the Spice Trade — a four-course dining experience tracing the deep connections between the Philippines, India, Southeast Asia, and the historic spice routes that carried ingredients, ideas, trade, and culture across oceans.
Before Spanish colonization, the islands now known as the Philippines were already connected to a much larger world. Traders, travelers, and neighboring cultures moved through the region, bringing spices, cooking techniques, religious traditions, language, textiles, and flavors that would leave lasting marks on Filipino food and identity.
Through this menu, Chef Bill and the Lasang Pinoy team will explore how Indian and South Asian influence reached the Philippines through centuries of trade, migration, and cultural exchange. Guests can expect bold spices, layered flavors, storytelling, and conversation around how food carries history from one table to another.
Kuwento sa Kusina means “stories from the kitchen.” Each supper club is designed to feel personal, communal, and thoughtful — part dinner, part cultural storytelling, and part shared table experience.
